For Garnish:

  1. Fresh coriander leaves, chopped

Instructions

  1. In a mixing bowl, whisk the sour yogurt until smooth. Add gram flour, turmeric powder, red chili powder, and salt. Mix well to form a smooth paste.
  2. Gradually add water while stirring continuously to avoid lumps. You should have a thin, buttermilk-like consistency for the mixture. Adjust the water quantity as needed.
  3. Heat this mixture in a pan or kadhai and bring it to a boil. Stir continuously to prevent sticking and lumps. Once it starts boiling, reduce the heat and let it simmer for about 15-20 minutes, stirring occasionally. The kadhi will thicken as it cooks.
  4. In a separate small pan, heat ghee or oil for tempering. Add mustard seeds, cumin seeds, fenugreek seeds, and asafoetida. Let them splutter.
  5. Add curry leaves, dried red chilies, grated ginger, green chili paste (if using), and minced garlic (if using). Sauté this tempering mixture for a minute or until the spices release their aroma.
  6. Pour the tempering over the simmering kadhi and stir well. Let it simmer for another 5-7 minutes.
  7. Taste the kadhi and adjust the seasoning if needed, adding more salt or red chili powder if desired.
  8. Once the kadhi is ready, remove it from heat and garnish with chopped fresh coriander leaves.
