Gatte ki sabzi

Ingredients:
For Gatte (Gram Flour Dumplings):
- 1 cup gram flour (besan)
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon carom seeds (ajwain)
- Salt to taste
- 2 tablespoons yogurt (curd)
- 2 tablespoons oil
For Gravy:
- 1 cup yogurt (curd), whisked
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon fennel seeds (saunf)
- Salt to taste
- 2 tablespoons oil
- Chopped coriander leaves for garnish
Instructions:
For Gatte (Gram Flour Dumplings):
- In a mixing bowl, combine gram flour, turmeric powder, red chili powder, carom seeds, salt, yogurt, and 2 tablespoons of oil.
- Gradually add water to form a smooth and firm dough.
- Divide the dough into small portions and roll them into cylindrical shapes (about 1/2 inch in diameter).
- Boil these cylindrical dumplings in water for 10-12 minutes until they float to the surface.
- Remove the boiled dumplings, let them cool, and then cut them into small pieces.
For Gravy:
- Heat oil in a pan and add cumin seeds and fennel seeds. Let them splutter.
- Add asafoetida and turmeric powder, followed by whisked yogurt. Stir continuously to avoid curdling.
- Add red chili powder, coriander powder, garam masala, and salt. Cook the gravy until it thickens and the oil begins to separate.
- Add the cut gatte (gram flour dumplings) to the gravy and simmer for about 10-15 minutes, stirring occasionally.
- Garnish with chopped coriander leaves.

Instructions
- Start by preparing the sugar syrup. combine sugar and water and bring it to a boil.
- Add saffron strands and rose water if using.
- Simmer the syrup until it reaches a one-string consistency.
- In a mixing bowl, combine the all-purpose flour and melted ghee. Mix them well until the mixture resembles breadcrumbs.
- Gradually add chilled milk to the flour-ghee mixture and whisk it into a smooth batter. The batter should have a pouring consistency, similar to that of dosa or pancake batter.
- Add a pinch of cardamom powder if desired and mix it into the batter.
- Heat ghee or oil in a deep, wide pan. You can use a Ghevar-specific pan or a regular wide-bottomed pan.
- Once the ghee is hot, place a few ice cubes in the batter to chill it further. Then, pour a ladleful of batter into the hot ghee in a circular motion, creating a round shape with a hole in the center. Be careful while doing this, as hot ghee can splatter.
- Fry the Ghevar on medium-low heat until it turns golden and crispy. Ensure that it’s cooked thoroughly, especially in the center.
- Remove the Ghevar from the ghee and drain the excess oil by placing it on a wire rack or on absorbent paper.
- Dip the fried Ghevar in the prepared sugar syrup, ensuring that it’s well coated. Let it soak for a few minutes, then remove it from the syrup.
- Place the soaked Ghevar on a serving plate, and garnish it with chopped nuts and silver leaf (varak) if desired.
- Allow the Ghevar to cool completely before serving. It will become firmer as it cools.
